What has happened to beef burgers?

Does anybody know why I can't find any beef burgers that taste the way I want?

 

When I was about 14, my gran used to get these double-pack quarter pounders from Sainsburys, complete with baps and burger relish, and they were orgasmic. When cooking, they would fizzle and pop with flames occuring under the grill.

 

Now, every burger I buy, Costco, Sainsburys, Tesco, Asda, you name it, they're all the same. They're dry on the outside, and generally a bit dry in general, and they all have a sort of spicy harshness on the throat.

 

Was something changed after the BSE thing?

I put my lack of appreciation for them down to years of abuse from smokes and vodka, and too many kebabs... I don't seem to like many things unless they have a few chilli's on the side nowadays...

We have started making them now, only takes a few minutes and so much nicer, especially if you use ground steak. yum yum.

y'know what, I have been thinking it might be smoking related. I'm due to give up soon.

I also go crazy for chilli. hmmm..

Well that's something to look forward to then! I have gum, but it's too grim on the mouth, and I have lozenges, which are disgusting, like chewing a cigarette or something, so I'm going to buy some patches next.

Stop being lazy and make your own burgers from scratch, they will taste better than any pre-formed beef lips and ass burgers that you will get from the supermarket. ;)

 

Got to agree with this :)

 

The crap that goes into those cheap beef burgers is disgusting. I guess you've never been to an abattoir? ;)

 

Home made ones are delicious, no where near as unhealthy or fatty and only take 10 minutes to prepare.

It's just supermarket beef mate - it comes from Argentina. How you expect beef burgers to be juicy after travelling for weeks frozen/defrozing/frozen again, then put on shelf. Go to your local butcher, buy local beef, mince it, form burgers and off you go. You can even add some onion into it and just bit of fresh egg. Mixed it properly, add salt and pepper and wooalaa!

Just for Peter (used this receipe a couple of times recently, found it via google):

 

Servings: 4

Level of difficulty: Easy

Preparation Time: 25 minutes

Cooking Time: 15 minutes

 

Ingredients:

10g butter

75g onion, finely chopped

450g minced beef, or minced lamb

0.5 tsp Thyme, chopped

0.5 tsp Parsley, chopped

1 egg, beaten

1 pinch fine sea salt and freshly ground black pepper

4 tbsp Olive oil, for frying

To serve

1 ciabatta loaf

4 lettuce leaves

 

Method

1. Melt the butter in a small saucepan, and add the onion. Fry over a gentle heat until the onion is soft and very pale golden. Leave to cool.

 

2. Mix the mince with the herbs and egg, and then season with salt and pepper. Add the onions, and mix.

 

3. Fry a tiny bit of the mixture in the frying pan to check for seasoning, and then shape into hamburgers. Heat the oil in a frying pan and cook the burgers for several minutes on each side.

 

4. Split the ciabatta horizontally, and toast under the grill. Fill the toasted ciabatta with lettuce, the mayonnaise and some cucumber pickle.Pop the hot cooked burger inside, and serve immediately.

 

Cook's Notes

The burgers are delicious with some chopped chilli and coriander instead of the parsley and thyme; or try adding some cayenne pepper, ground cumin and coriander to burgers using minced lamb. These spicy burgers are great served with sweet chilli sauce or add one tablespoon of chilli sauce and one chopped fresh chilli into the raw burger mixture instead of herbs.

 

Do make sure the meat has a little of fat in it, or the burgers will be very dry when cooked.

Beef burgers should be either of the following and not the shite you get that is mass produced (exception to follow).

 

1) As mentioned get to your local butcher.

 

2) Homemade, utter brilliance.

 

and the exception to the rule on mass produced.

 

3) Marks & Spencers Aberdeen Angus beef burgers.

 

When making beef burgers only use 100% prime beef, or if you want to go all the way get prime cut 100% Aberdeen Angus mince (make sure it does not contain Aberdeen Angus cross), as Aberdeen Angus is by far the best and tastiest beef.

cheap is best
That's so true.

My Mrs takes the piss out of me because I like cheap crap food like fish fingers and cheapo beef burgers. She loves cooking 'proper' food and we do eat varied and healthy food but sometimes I'd prefer to just have the simple rubbish food, like my mum used to serve up.

Mind you, I wouldn't want to eat it every day. It must be a nostalgia thing.
