Poo they will smell a bit:p EASTER PRAWN AVOCADO SALAD (Serves 5-6) 1 kg medium prawns, peeled and de-veined 1 punnet baby tomatoes 1 large Lebanese cucumber, chopped 1 small red onion, finely sliced 2 tablespoons shredded basil 1 tablespoon baby capers, rinsed finely shredded zest of 1 small lemon 20 kalamata olives 2 avocadoes, peeled and chopped Dressing 1 small clove garlic, crushed 1/3 cup extra virgin olive oil 2 tablespoons lemon juice freshly ground black pepper salt and caster sugar to taste rocket leaves, for serving 2 tablespoons pine nuts In a large bowl the combine prawns and salad ingredients. Whisk ingredients for dressing to combine and add to salad. Toss gently and spoon salad over rocket leaves.
