not had dealings with ceramic worktops but cannot see why there would be a problem, they have to be cut anyway, so cutting the whole wouldn't be a problem for the fabricator, the depth should be standard.

only presuming but would be amazed if you can't

the only problem would be the cut edge

Depends if he means "inset" as in it drops in a hole with a lip over, or like a Butler, it seals to the underside of the worktop.

 

If the latter, I'd suggest lining the sides of the cut-out with a hardwood trim, maybe, but it would have to be fully bonded, and who knows aesthetically, maybe it would work with a beech effect worktop.
