I think the tunnel is needed only if converting an auto to six speed.

 

Your diff would work in theory, with the correct prop shaft, but the gearing would be far too short to live with on a daily basis.

 

There are a couple of diff options open to the V160/1 swap, TT6 big diff, TT6 small diff & TT auto diff.

 

For the TT6 big diff you'd need the drive shafts from the diff to each rear hub as well. I think your own drive shafts will work with the TT6 small diff and the TT auto diff.
