I have a bolt in the wing that the head came off when removing it to replace it with a bling one :( that is next on the list...

How much is sticking out, if any? If you can get some mole grips on it that's your best bet, but soak it with WD40 for a couple of hours first. You could again try cutting a slot for a screwdriver but that's going to be more difficult if the heads come off

If it's flush you can try a screw in type stud extractor, but you'll probably end up having to drill it out and re-tap it. At least it's an easy place to get to!

My fear with screw in extractors, especially cheap ones in small diameter broken fasteners, is they can snap. Then you have a pot hard broken off insert in the broken bolt. Normally no drill bit will touch it, and you are in a real mess. If the fastener is in something hefty and expensive, like a new block, you can get them spark eroded out, but that's financially and practically not an option for a fastener in sheet metal. I would drill the bolt remains out, starting with a 1/16 bit and going up to where the bolt either unscrews with the drill rotation, or you have it all drilled away. then re tap or Helicoil and re tap. Rivnuts may be an option in some places, there are all sorts of methods depending on an individual situation.
