Hellstrom
Just fill out the V5C using the export sheet so it can be unregistrated in the dvla system. Its straight forward rest of the V5 Goes with the buyer so he can reg it in his contry.
Supra Gaz
I sold my first supra to a chap in Belgium, nice lad he was. As Mr Helstrom has said, its quite straight forward, i sent a note to the DVLA with the sellers bit of the V5 explaining as apparently they can mess it up. I did get a request for me to tax it 4 months later but then i filled in the 'i have sold it bugger off bit'. Make sure they pay in cash or you have the money in your bank or you could be in poop alley.

letmeshowyou
Obviously these guys have the experience, but their advice isn't strictly what the DVLA say you should do. There's a booklet in with the V5 that explains it (I'm going through exactly the same thing with my bmw at the mo). http://www.direct.gov.uk/prod_consum_dg/groups/dg_digitalassets/@dg/@en/@motor/documents/digitalasset/dg_065264.pdf The specific bit is on page 8.
