Mike Posted September 8, 2010 Share Posted September 8, 2010 I'm seeking a lunch suggestion I'm tired of the same old soup and/or salad arrangement. I'm pescetarian (I eat fish, but not meat), and I'm wheat intolerant (if I go near bread I balloon to the size of a small house), so nothing bread based please. I have access to hot water and a microwave I would like zero preparation time, and I don't want to have to bring anything in from home - I'd like to buy in bulk and store in my draw at work (I don't always get chance to leave the office at lunch time, so needs be storable). Alteratively baked beans/spagetti hoops etc. What about humus and carrots/celery/stick things? I like falafel and humus, yum! (although they are fridge based). I might give it a go mind.. but how about topping? can you get those canned do you think? Try "twice-baked" potatoes. Bake them crispy in the oven at home. Then scoop out the middle, mash it with your favourite cheese/pesto/tuna/etc and re-fill it. You can then re-heat it in the microwave in just a few minutes the next day. We boiled some potatos and did a boil in the bag fish in the kettle at my old work, just tape down the button. Throw some veg in the microwave and you are good to go.
