nick_karkie Posted January 11, 2010 Share Posted January 11, 2010 Thanks for the feedback and you make some valid points I dont like frozen at sea fish, freezing white fish changes the texture of the flesh and also makes the flesh watery IMO, there are some fantastic fish suppliers in the area who can supply fish fresh 6 days a week,I would consider closing on Sun and Mon as it happens as fish is not so good these days and allows one team to cover the shop Have several placestolook at, the rubbish weather has delayed this somewhat but no rush, the place and location has to be 100% right for me Try both before you decide. If your company can supply you fresh fish that was caught that day then that is great, if it is on the boat for days waiting to come in then its obviously not so good. We should be opening up a restaurant in Southend opposite Peter Pan's playgraound later this year but it is a risk. You are doing the right thing prioritizing location because shops in good locations can take upwards of £20,000 a week whereas a good chippy in a bad location could really only maximize about £7,000. I think with prices you should gradually increase them as with someone like Rick Stein he has TV shows to make people aware of what he stands for and where you can get his food. There is a pub near me that specializes in sandwiches, its all very simple you get a big sandwich of your choice (about 40 to choose from) and a big bowl of chips/soup/salad. Prices started at 3.95 8 years ago and the portions were big and the chips are 10/10! They now have to turn customers away its so busy in there and they can demand £7 a meal (for something they can probably produce for under 50p) and £3.30 a pint! My boss was offered it a few months back, the stipulation is that it has to be up and running by april (council condition). Go for it if it interests you , I am only working for this guy for a while longer because my father is awaiting planning permission on 2 other sites and I am going with him when they are ready, so I couldnt care less if he gets it or not haha The rent is fairly cheap, £14,000 i think and in the summer it is packed along there, it is a bit seasonal but the summer months should be good enough. We won the 2nd best chippy in Essex this year but the winner basically paid its way to number 1, no coincidence that they had an article in the Seafish magazine the same week the competition results were due to be done. After much arm twisting Dad did a competition for Indian food in Bromley by the Bromley council. They loved the food and mentioned how good quality everything was. Dad came 3rd place in the end, the 2 restaurants above were both well known business in the area who have won pretty much every year, even though we have had customers coming from them saying the quality of food as gone down. Few weeks after competition, we found out that they all given bottles of bubbly when attending to taste the food. They are both high street restaurants who have been their for years!
