Abz Posted January 8, 2010 Share Posted January 8, 2010 Friend of mine just brought an amazingly clean Fish & Chip shop which he has converted into his second branch of a open air Indian takeaway. The previous owners were family & due to both family health & apprantly price rise of good quality cod & other recipes he sold the shop. I'd first get in contact with suppliers & pricing on local fish etc, the main thing I'd think would be local cod would be expensive an haddock is normally cheaper. tooquicktostop Posted January 8, 2010 Author Share Posted January 8, 2010 Make sure you get some decent refrigeration for your shop aswell having the right fridges for the job as fish and other salty and acidic foods can destroy a fridge . Let me know and i can point you in the right direction with suppliers. Used Foster for most of my career, always seems to deliver the best results with very smart professional looking units that have very little break down issues, they are expensive The market is flooded right now with quality second hand catering equipment and restaurant furniture and I feel I could set up a great shop with minimum overheads I know there is not a huge mark up in Fish and chips and volume is the key, a big change from my years cooking in fine dining restaurants and hotels !! tbourner Posted January 8, 2010 Share Posted January 8, 2010 I don't know if it's relevant but the most popular chippy round here (big nasty council estate full of chavs) is the one that isn't bothered about quality but give you easily twice as many chips as everyone else. The fish isn't bad - it's not great but it's better than average. Kebab meat and chips is a popular choice as well and similarly you get LOADS of chips and LOADS of meat with it. Just thinking rather than going too gourmet maybe try for some nice fish with nice batter etc. but just get bog standard chips and give them away by the bucketload! I know what your saying 100% and fully understand the "value" side of the business, I have to say I hate this kind of poor quality large portion frozen fish from god knows where doner and trans fat kebab serving shop, it is a mile away from what I want to build my reputation on, however they have their place and I fully respect that, I will not be challenging for their title, they are welcome to that market, I need to make sure though and this is a very valid point that my target audience is looking for quality and not an extra scoop of chips I want my customers to comment on the quality of the fish, the lightness of the batter and how crisp it is with so much flavour, born out of quality fresh ingredients and if you like the fish that much you can buy it off ice yourself from the shop and take it home I worked in the Cold fish section of the Savoy as part of my apprenticeship and I am comfortable preparing all kinds of fish and shellfish, will train my staff to the same standard and happy to give advise to customers on cooking and even prepare the fish for them, including recipe cards etc, all added value to the shop I plan on being around in the shop quite a bit at the start, I work Monday to Friday so Fri nights and Sat will be in at the deep end ! Not in my chinese I still feel fresh fish over a pizza are two very different things, the problem is, and you highlight it very well, Fish and Chips has a poor reputation now for quality, value and taste It should not be this way, it is a far superior fast food I am reallly enjoying the feedback though as this is exactly the stuff I need so I am fully prepared I have a wonderful Shawarma grill in this building, making authentic "kebabs" every day for our corporate customers (4000), it is £5 with the consession, we sell 300+, it is made with fresh marinaded lamb or chicken, traditional salads and pickles, relishes and fresh lemon, a truly healthy "kebab" This runs along side salad bars, grills, wok, traditional etc, so I have a good market understanding of what sells and what people are willing to spend I think Quote Link to comment Share on other sites More sharing options...

Usually sweet and sour chicken balls (10 balls!!), chicken chow mein, egg fried rice and prawn crackers. sometimes we go for house special fried rice and plain chow mein. Would this be a resort town? How about Fish Delivery? When I used to go up to Norfolk with the folks, in Great Yarmouth there was a Fish and Chip shop that would deliver fresh fish back home.
