Cooking recipes

Hi everyone I'm moving out of my parent’s house next week and thought as my cooking skills aren't great that I need some good recipes. I'm good at following recipes so be as adventures as you like and also simple and quick recipes.

So could you post your favourite recipes in here for me.

I'll start it off with posting a recipe out of the othere thread that Guigsy kindly posted and I must say that sounds like one mighty good burgar

 

Its hardly a full roast with all the trimmings but i just made this...

 

Ive called it "The hangover heartattack" and its a bit like a burger but with a twist. This makes 2.

 

4 x Thick Richmond irish sausages (Richmond sausages are the king of sausages, Make sure you dont use any of that fashionable chunky rubbish, richmond sausages are nice and smooth which is what makes them great for this kind of thing)

3 or 4 rashers of smoked streaky bacon

1 inch of chorizo sausage (optional)

A chunk of medium cheddar, enough for a couple of handfulls.

3 x slices of Jalapeño (red)

Some drops of hot sauce (tabasco, whatever)

 

Remove as much fat as you can from the bacon and cut into small pieces. Chop the chorizo into 5mm cubes. Remove the skins from the sausages, add the hotsauce and mush them up to make a sausage meat paste.

Chop the Jalapeño and the cheese into 5mm cubes.

Mix all the ingrediants together (but not the cheese) and then flatten the mixture out till about 2/3 of an inch thick. Sprinke over the cheese giving it a good covering. Dont over do it, but make sure you have enough!

Fold it in and make sure the cheese is mixed in well with the mixture.

Seperate the mixture into 2 parts about the size of a burger and fry in a pan. You wont need any oil. Once its starting to brown on the edges flip it over.

 

When its done you should have a tasty, spicy and very unhealthy treat that ooozes strings of cheese when you cut into it.

 

would like more healthy options as well but as i'm living above a pup thought this one would be great for me :D

FISH and CHIPS

 

lets start with an easy one

 

1 think cut cod loin boneless and skinless

250g Plain flour

1 pinch turmeric

pinch salt

pinch cracked black pepper

200ml ice cold Newcastle brown ale

 

2 king edward potatoes

Tartare sauce

1 lemon

Sunflower oil for frying

 

1. heat oil to 150oC

2. peel potatoes and cut into thick chips

3. blanch in the 150oc oil until soft (about 5 mins) with no colour

remove from oil and put to one side, turn up the heat to 180oC

4. dust fish in a little flour and seasoning

5. whisk the ice cold beer and 250g flour with salt, pepper and tumeric until a thick batter forms (ice cold makes for a crisper batter)

6. dip the floured fish in the batter and place in the hot oil, cook for approx 5 mins until crisp batter, test with a sharp small knive by pushing into the fish, the tip sould come out very hot, then it is cooked

7. remove fish to the plate, add the chips to the hot oil and colour, this way they will be crisp on the outside and fluffy inside

8. serve with tartare sauce and a squeeze of fresh lemon

 

Add bread and butter, salt and vinegar with mushy peas if you like

 

its amazing what home cooked fish and chips tastes like !

Cornish crab cakes with a roast pepper mayonnaise

For 4 persons

 

300g white crab claw meat

4 spring onions

2 tbsp chopped coriander

2 tbsp mayonnaise

1 tsp curry powder

½ tsp baking powder

1 lemon juiced

1 egg

few drops Tabasco sauce to taste

breadcrumbs to bind

mixed salad leaves

French dressing

 

Red pepper mayo

 

2 red peppers

4 tbsp thick mayonnaise

lemon juice

2 cloves garlic

 

Method

 

1. pick through the crab meat to ensure all shell is removed

2. chop spring onions finely and add to crab

3. combine crab with mayo, curry, baking powder, lemon juice and egg

4. stir in coriander

5. bind together to form soft mix with breadcrumbs and season with Tabasco and salt and pepper

6. shape in to rings and allow to rest in fridge for at least 2 hours to firm up

 

FOR THE RED PEPPER MAYONNAISE

 

1. Roast the peppers whole in a hot oven until soft, wrap in cling film and allow to cool

2. peel peppers and de seed

3. puree peppers in blender until smooth and add to mayonnaise with lemon juice

 

TO FINISH DISH

 

1. Pan fry crab cake in a little olive oil until golden, finish in oven if required

2. dress salad leaves with French dressing and season

3. drizzle a little red pepper mayonnaise on the plate with a ball of salad

4. finish with the hot crab cake and serve

Sweet & Sour Chicken

 

Preparation time less than 30 mins

 

Cooking time 10 to 30 mins

 

 

Ingredients

200g/7oz white rice

250g/8oz chicken breast, diced

4 tbsp vegetable oil

75g/2½oz carrots, cut into thin 'matchsticks'

60g/2oz baby sweetcorn, sliced

60g/2oz green beans, trimmed

2 tbsp sliced spring onions (you can replace the veg with any you like really, don't have to use these)

For the batter

1 egg yolk

freshly ground black pepper

1½ tbsp cornflour

1 tbsp milk

 

For the sauce

4 tbsp chicken stock

2 tbsp tomato ketchup

1 tbsp soy sauce

2 tbsp rice wine vinegar (I use normal vinegar if I haven't got any Rice Vinegar)

2 tbsp caster sugar

 

Method

1. Cook the rice according to the instructions on the packet.

2. Make the sauce by mixing together all the sauce ingredients in a bowl.

3. Beat together the batter ingredients in another bowl.

4. Heat two tablespoons of oil in a saucepan.

5. Dip the chicken in the batter, then fry it carefully. Remove from the pan and set aside.

6. Next, stir fry the carrots, baby corn and green beans in the remaining two tablespoons of oil for four minutes.

7. Add the sauce and boil for one minute. Then add the chicken and spring onions and heat through.

8. Spoon a helping of sweet and sour chicken on top of a bed of rice. Serve.

 

 

(Taken from the BBC Website, not mine but I do it regularly, lovely :) )

 

I normally make it with egg fried rice which is dead easy to make. Get a saucepan very hot and bang a couple of whisked eggs in there, whisk it around in the pan until the egg looks scrambled and in small pieces, then add the cooked rice and mix together. Nice if you add some peas in there too :)

Home Made Beefburgers

 

Preparation time less than 30 mins

 

Cooking time 10 to 30 mins

 

 

Ingredients

For the burger

540g/1lb 3oz minced beef chuck steak

25g/1oz chopped coriander

1 onion, chopped

1 tbsp Dijon mustard

1 free-range egg yolk

1 tbsp olive oil

salt and freshly ground black pepper

To serve

4 slices mature Cheddar

4 tbsp mayonnaise

½ iceberg lettuce, shredded

4 ciabatta rolls

1 red onion, sliced

1 beef tomato, sliced

 

Method

1. Place all the burger ingredients in a mixing bowl and stir to combine. Using your hands, shape into four equal-sized patties.

2. Preheat the grill to hot. Cook the burgers under the grill for 15 minutes, or until cooked through, turning once.

3. Top each burger with a slice of cheese towards the end of the cooking time.

4. Before serving, mix together the mayonnaise and lettuce. Cut the ciabatta rolls in half and toast under the grill on both sides.

4. Top the bottom halves of the ciabatta rolls with the lettuce and mayonnaise, followed by a slice of tomato.

5. Arrange the burger and cheese on top of the ciabatta, followed by a slice of red onion. Top each burger with the other halves of the ciabatta rolls and serve.

 

Again not my recipe but I add some finely chopped red onion and a squirt of ketchip into the burger mix too.
