You can buy them ready made but it's not cheap. Around £80k for a decent one isn't it? You read my mind though, the E-Type in white is pretty much all time favourite car. I believe they made one using the 4*4 Jag X-Type gear with the 3 litre V6 engine. The same company also do DB5s fully restored for around £100k iirc. He meant an E-type that has been upgraded in all areas. Modern brakes, suspension, ABS, modern electrics etc etc. One company does all this on a bespoke basis. Takes about two years apparently.
