Ok so first of all, the Emanage is a piggyback. This means that you run the original Supra ECU, then wire in the emanage to run in conjunction with stock ECU.
The emanage recieves certain signals relating to fuel/ignition/manifold pressure etc, then outputs a different value back to the main ECU. This is known as signal "fudging". There are also a number of signals like water temp, crank angle, rpm etc that the emanage gets wired to but it only reads these signals.
With regards to temperature sensor, the eManage can be wired to read the factory water temperature sensor, or use it's own independent sensor. Assuming you have a problem with your factory water temp sensor, it will affect both the stock ECU & piggyback.
The factory ECU however does not use an oil temperature sensor, so it does not care about this. As a result neither will the eManage
If you are using an emanage blue, you can find software and instructions here
If you are using emanage ultimate you can find software and instructions here
I think Whifbitz have a branch somewhat near you. They have loads of experience setting up NA-T supra's on emanage. No doubt they can help you if you get stuck.
